Croquembouche – cake composed of profiteroles

This is a traditional French festive cake or petit four, which consists of profiteroles of choux pastry filled with pastry cream and caramel crust. It is decorated with caramel ornaments. It can be often seen in the form of a mighty hollow tower, but the embodiment can be made in various shapes.
